AROMA: Eden Valley Cabernet is greatly underrated, showing lovely florals of violets and dark brambly fruits.
PALATE: Fine supple tannins.
VINIFICATION: Harvested from block 24 on 30th of April and block 38 on the 1st May from the Estates eastern side at an average of 14.7 ºBe The fruit was harvested in the cool of the night and harvested using a selective destemming harvester and fermented in 5 tonne and 10 tonne open fermenters after cold soaking for 2 days prior to fermentation. MATURATION The wine was then matured in 60% new tight grain French oak barriques and 40% 1-2-year-old tight grain French oak barriques.
