Aromatics : Lifted nose of fresh Satsuma plums, spice notes and hints of liquorice and earth characters. Palate : A medium to full bodied wine with excellent structure. Rich flavours of plum and dark berry fruit, with a hint of bitter dark chocolate and a line of fresh acid. A long lingering finish.
Cellaring : Will reward cellaring for 5-7 years or more.
Vineyard Notes : 2016 was an outstanding vintage, the exceptionally low yields produced fruit with rich textures and flavours.
Winemakers Notes : Six parcels of fruit were sourced from 3 estate vineyards. All parcels were fermented and aged separately prior to blending. Aged for 15 months in a combination of new, 2nd and 3rd use French oak barrels of which 20% were new.
Food Pairing : Dry-aged rib roast with red wine jus and crispy garlic potatoes
