This incredible sparkling wine from Philip Shaw is an excellent light straw colour with a fine mousse. With an abundance of savoury complexity with brilliance and focus, the blend of Chardonnay and Pinot Noir creates a balance with great length and structure. The Pinot Noir offering drive and depth whilst the Chardonnay contributes to the volume and vibrancy.

The first pick of harvest, the Edinburgh is picked in mid-February when acid and flavour align. The grapes are hand harvested and whole bunch pressed to limit extraction of tannins, then fermented in 100% older oak with indigenous yeast with natural malolactic fermentation in spring. Tiraged after 10 months in older oak and left to mature for minimum 2.5 years before disgorging.

    The Best NSW Sparkling Wine!

    I originally tried this at Pinot Palooza and then found it here for a great price. It's not what you'd expect from Philip Shaw - very different and cool label! But it's such a great sparkling wine, very complex with great balance - definitely worth a try!
