Since 1982, Woodstock has built a stellar reputation for crafting exceptional Cabernet Sauvignon. Nestled in the higher, cooler reaches of McLaren Vale, Woodstock Wine Estate offers an ideal environment for this variety. Warm, sun-soaked days paired with cool evening gully and sea breezes allow the Cabernet fruit to ripen beautifully while preserving its natural acidity and full-bodied style.
The old Cabernet Sauvignon vines at Woodstock are low-yielding but deliver intensely concentrated flavours. The estate-grown fruit is destemmed and crushed into stainless steel fermenters, where it undergoes a careful 5-day fermentation, with twice-daily pump-overs to extract optimal colour and tannin structure without any bitterness or over-extraction. After fermentation, the wine is aged for over 14 months in a blend of new and seasoned American and French oak hogsheads, adding both softness and complexity.
While McLaren Vale is famed for the lush, generous mid-palate of its Shiraz, this richness shines just as brilliantly in Woodstock's Cabernet Sauvignon. The region's signature Cabernet characters are unmistakable, with vibrant aromas of blackcurrant, sweet black plum, and a hint of tomato leaf. On the palate, it’s soft and fruit-forward, with notes of choc-mint balanced by elegant, structured tannins that lend the wine a seamless richness.
